Baked Camembert in Filo with Cranberry Chutney

Add a touch of fresh, tangy cranberry sauce to this appetizer classic. It just takes minutes to create a buttery bundle, filled with oozing, warm Camembert or Brie cheese, with a scarlet dash of cranberries. You could substitute Major Grey Chutney if you like or leave this classic: brie, filo, butter. Provide pear wedges or crusts of bread for dipping.

4 sheets filo dough
¼ cup, approximately, unsalted butter, melted
8-ounce wheel Brie cheese
2-4 tablespoons cranberry sauce or Mango Chutney

Finishing Touches

Apples, pears, sliced
Crostini, or French bread

Preheat oven to  375° F. Line a baking sheet with parchment paper.

Have ready, 4 sheets of filo dough. Brush each one with butter and layer them. On the last layer, position the round of cheese, spread on cranberry sauce (or chutney). Gather filo leaves around the cheese and press slightly to seal. Brush with more butter.

Bake 20-25 minutes until golden brown. Pull open with a fork, and serve warm.


Serves 8-12, as a small appetizer.  You can make a few of these and freeze unbaked and bake off as required.
