Vegetable Chips

I fell in love with www.Terrachips over the holidays. These are fried, thin chips of sweet potatoes, carrots, parsnips, yaro and beets.  It’s easy to make your own at home but slow baked, not fried. Much less fat.Tossed with some sea salt and vegetable oil, they are addictive.


To make your own simply use a vegetable peeler or mandolin and make a ton of various vegetables slices and shavings.

Preheat oven to 350 F.

Place on a large baking sheet lined with parchment paper and toss with a bit of oil and salt (and any other seasonings you want). Bake for 20-40 minutes, tossing oven so they evenly bake and crisp. Serve! (If they don't get crisp and you're impatient, these are a wonderful side dish)
