Macaroni & Cheese Muffins with Soda Cracker Crumb Topping

Baked in muffin cups, this creamy, irresistibly cheesy Mac and Cheese bakes up into a perfect snack food, that is great for kids or dining for one. I make about a dozen Mac and Cheese muffins with this recipe and put the rest in a small casserole (that serves 1-2 people) Mac and Cheese which I freeze and heat up another time. Swop panko crumbs instead of soda cracker crumbs – either way, you’ll have a crisp, buttery top.

Mini Mac and Cheese Muffins

2 cups elbow macaroni , cooked until tender
Salted butter, for brushing pan
3 tablespoons unsalted butter
3 tablespoons flour
1 1/4 cups milk
2 1/2 cups medium orange Cheddar cheese, shredded
1 cup Havarti or Monterey Jack cheese, shredded 
1 teaspoon dry mustard
Salt and pepper to taste
1/4 teaspoon paprika
Pinch cayenne
2 eggs

Soda Cracker Crumb Topping
1 1/4 cups finely minced, soda crackers
1/3 cup butter, melted
Salt and pepper to taste

Prepare macaroni as per package instructions.  Drain and set aside.

Preheat oven to 350 F. Smear 18 muffin cups with melted butter and place on a baking sheet.

In a 4 quart saucepan, melt the butter and add the flour and cook to brown flour slightly. Slowly pour in the milk and let warm very briefly, and then add in the cheeses, and seasonings. Cook over low heat to melt the cheeses so you have a nice saucy mixture. Let cool to just about room temperature and stir in the eggs. Then stir the macaroni into the sauce. Ladle out into the prepared muffin tins.

Meanwhile, in a small bowl, mix the soda cracker crumbs, butter, salt and pepper. Sprinkle a small amount over each Mac muffin.

Bake until set, 35-45 minutes until the cheese is bubbling. Allow the muffins to cool, to set up the cheese and make them easier to handle, about 30 minutes.

Makes about 18, depending on size of muffin pan.
