Welcome to the March 2025 Issue of Betterbaking.com!

This is a packed month of baking holidays from Mardi Gras, to St. Pat’s and Purim to. My recipe archives are replete with countless Irish Soda Breads and Purim Delights and yes even a classic King’s Cake so enjoy. In the meanwhile, here are this month’s special edition recipes.

Flattened Caramelized Croissants
These are best if the croissants you start with are quality butter-based croissants but Kirkland (Costco) croissants will also do the trick. I use a cultured or ‘upscale’ butter for best flavor and opted for semi-salted. If you can’t find semi-salted, use unsalted butter and dust on a smidge of coarse sea salt at the end. These taste like kouig aman but 1000% to make.

A little slurry of flour and water added to this traditional challah dough makes it extra velvety! What a great technique to add to your baking skills!

I love these simple but addictive cakes that roll off the fork in tender, moist, golden crumbs.
This is one that should be in monthly rotation. I add chocolate chips but it’s perfect without them.

It’s a perfect foundation for any sort of filling you use it with.
